I love the stuff. It brings back so many memories--of my childhood, at my aunt's house in Brooklyn, we'd drive in for the day on Sundays from Long Island. We'd leave after church and arrive around 12 or 1. She'd have lunch out--cold cuts, semolina bread, ricotta, and fresh mozzarella. I'd eat the salami and fresh mozzarella on semolina bread.

Today I bought some--we were going to have a few of the wife's friends from work over, but they couldn't make it due to flooding and the turnpike being closed, so we had it for lunch. I could eat an entire ball of fresh mozzarella if left to my own devices--sometimes, I think I should just eat as much of it as I can stand and get the urge out of my system once and for all, but I fear it would not work. It's all the self control I have to slice a few pieces off and put the rest back. It's the perfect creaminess, the stringiness, the moisture, the bite of the cheese, so mild yet so flavorful. I don't even need anything with it--but if I drizzle it with olive oil and garlic, or eat it with some sundried tomatoes, it's great as well.

Agreed, love the stuff as well. Nothing like making your own bottle of olive oil, adding various flavorings to taste, and then having it with some fresh mozzarella.
